Traditional Potato Latkes
Crispy, Golden, and Perfect for Hanukkah (or Any Time!)
Latkes are a delicious staple of Hanukkah celebrations, symbolising the miracle of the oil that lasted eight days. Fried until golden and served with applesauce or sour cream, these savoury treats are beloved across generations.
Ingredients
(Serves 4–6)
- 4 large potatoes, peeled
- 1 medium onion
- 2 large eggs
- ¼ cup plain flour (or matzo meal for a traditional touch)
- 1 ½ tsp salt
- Freshly ground black pepper, to taste
- Vegetable oil for frying
Instructions
1. Grate the Potatoes and Onion
Using a box grater or food processor, grate the potatoes and onion. Place in a clean tea towel or cheesecloth and squeeze out as much liquid as possible.
2. Mix the Latke Batter
In a large bowl, beat the eggs. Stir in the grated mixture, flour (or matzo meal), salt, and pepper. Mix well.
3. Heat the Oil
Pour about ¼ inch of oil into a heavy frying pan and heat over medium-high heat until shimmering.
4. Fry the Latkes
Scoop about 2 tablespoons of the mixture for each latke and gently flatten in the pan. Don’t overcrowd. Fry 3–4 minutes per side until golden brown and crisp. Transfer to a plate lined with paper towels.
5. Serve and Enjoy
Latkes are best served hot and fresh! Offer with traditional toppings like applesauce, sour cream, or even smoked salmon for a modern twist.
